a fresh side...

Is it just me, or are sides so hard to come up with sometimes?  It feels like we eat the same ones over and over again....butter beans, asparagus, squash, repeat.  For me, it's hardest when we're making Mexican for dinner.  Outside of Spanish rice, there's just not that many sides that seem to go with it.

This week like so many weeks, we had Mexican night...but instead of the ole faithful rice, JD whipped up something a little different.  Corn maque choux (corn-moc-shoe)!  It was very refreshing and very tasty...so I thought I would share!


Ingredients:
2 cans white or yellow corn, drained (not creamed corn)
1 can rotel, drained (original)
3 tsp. butter
cajun seasoning
1/2 bell pepper, diced
1/2 onion, diced
4 slices of bacon (optional)
1/3 c cream (optional)

Cook bacon (if using) in skillet until crisp.  Remove bacon from skillet and set aside.  Remove majority of grease from skillet.  Melt butter in the same skillet over medium/medium-high and saute corn, onions, bell pepper, and seasoning until soft, for about 10 minutes.  Add rotel and cook for 3 more minutes.  Finally, crumble bacon in and add cream.  Let simmer and thicken.  Enjoy!


We absolutely loved it, and thought it was a perfect compliment to chicken fajitas!

  1. yum! i usually serve with mexican: white rice, with medium spiced salsa mixed in it and black beans. it's pretty good too and has a lot of kick to it which we like plus you get the extra protein and fiber with the beans. :) great seeing yall wed night!
