Have you ever had one of those days where you just felt like cooking something? It happens pretty frequently at the Chambless Ranch, but rarely do we act on it to the extreme we did on Sunday.
After a great church service and lunch with one of Chams friends from college, we found ourselves at the ranch with nothing to do (or just nothing we wanted to do!). I got the urge to cook something and before we knew it, we were at the grocery store buying the things for an apple pie. Chams had wanted to make one for sometime now, so he was super pumped for our very first attempt.

Apple Pie
Ingredients:
2 Refrigerated Pie Crusts
8 cups sliced, peeled Granny Smith apples (3 lbs)
2 T lemon juice
3/4 cup white sugar
1/4 cup brown sugar
1/4 cup all-purpose flour
1 tsp cinnamon
1/4 tsp ground nutmeg (I omitted this - not a huge fan of nutmeg)
2 T butter
1 egg yolk
1 T milk
Peel apples and slice. (Chams did an excellent job with this)
In a large bowl, toss the sliced apples with lemon juice.
Combine sugars, flour, cinnamon and nutmeg.
Add to apples and toss well to coat.
Fill pastry lined 9 inch pie pan with apple mixture. Dot with butter.
Place second crust on top of pie filling, cut slits in top of crust to vent. (We latticed our second crust...pretty!) Seal the edges of the crust.
In a small bowl, beat the egg yolk and milk. Brush mixture over top crust.
Bake at 425 degrees for 15 minutes. Reduce heat to 350 degrees and bake 40 more minutes, or until crust is golden and filling is bubbly.
Serve by itself or with a scoop of vanilla ice cream!
