belated recipe and some good news...

I seriously meant to post this recipe on Monday along with some Happy Halloween wishes, but as you can see, it's 2 days later and I'm just now getting around to it.  Blame it on a crazy week...or maybe even pregnancy.  This girl doesn't move as fast as she use to!  

We had a great Halloween with few real Trick-or-Treaters.  We've never really kept the light on at the Chambless Ranch for Trick-or-Treaters...and in Athens we always had lots of them, so this year I was bound and determined to get at least a few.   Light on and candy ready, and we got 15 or so treaters. That might sound like a pretty good turn out, except for there was about 3 of the 15 in costume.  I think next year I'm going to have a sign on the bowl that says "No Costume = No Candy!".  It was fun nonetheless.

Any who...I hope you all had a wonderful Halloween and here's the recipe anyway! 

Pumpkin Cheesecake: (thanks to Paula)

Ingredients
Crust:
1 3/4 cups graham cracker crumbs
3 tablespoons light brown sugar
1/2 teaspoon ground cinnamon
1 stick melted salted butter

Filling:
3 (8-ounce) packages cream cheese, at room temperature
1 (15-ounce) can pureed pumpkin
3 eggs plus 1 egg yolk
1/4 cup sour cream
1 1/2 cups sugar
1/2 teaspoon ground cinnamon
1/8 teaspoon ground cloves
2 tablespoon all-purpose flour
1 teaspoon vanilla extract

Directions
Preheat oven to 350 degrees F.

For crust:
In medium bowl, combine crumbs, sugar and cinnamon. Add melted butter. Press down flat into a 9-inch springform pan. Set aside.


For filling:
Beat cream cheese until smooth.


Add pumpkin puree, eggs, egg yolk, sour cream, sugar and the spices. Add flour and vanilla. Beat together until well combined. Pour into crust.


Spread out evenly and place oven for 1 hour. Remove from the oven and let sit for 15 minutes. Cover with plastic wrap and refrigerate for 4 hours. Enjoy!


It's so yummy!  A must try.  The original recipe called for 1/8 teaspoon of nutmeg, but I'm not a huge fan, so I omitted it and didn't miss it a bit!  I made it for our small group and, coincidentally, it cracked in the shape of a cross while cooling.  No worries, though...isn't that what Redi Whip is for??

No, I'm not re-announcing baby Chamlet....Chams, Jr. is getting a new cousin!!!  We're so thrilled for Uncle M and Aunt S!  Baby "Cubbie" will be here in May!  Chams, Jr. is getting a buddy and we all couldn't be more happy!  It's definitely going to be an exciting spring for the Downs family!  Granny Bon will be a grandma of 2 in less than a year.  Needless to say, she can hardly contain herself!
